Chicken and Veggie Quesadillas 


1 boneless chicken breast shredded 

1 each red & green bell peppers (Roasted or sautéed)

1 red onion

3oz shredded cheddar cheese

Place skillet on medium high fire, spray with nonstick cooking spray. Place flour tortilla down 

with cheese, shredded chicken and roasted vegetables, fold tortilla in half let brown then flip 

over let brown about 3-4 min. Remove the tortilla from the skillet, cut into 4 strips and serve 

with salsa.
